Ingredients:
- 1 cup quinoa
- 2 cups water
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 1/4 cup olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups mixed vegetables (such as broccoli, carrots, and bell peppers)
- Salt and pepper to taste

Preparation Steps:
1. Preheat oven to 400°F (200°C).
2. In a medium saucepan, bring the quinoa and water to a boil. Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the quinoa is tender and the water is absorbed.
3. In a large bowl, whisk together the tahini, lemon juice, and olive oil.
4. Add the chopped onion and minced garlic to the bowl and mix well.
5. Add the mixed vegetables to the bowl and toss to coat with the tahini dressing.
