After harvest, each cherry was depulped with minimal water and dry fermented for 36 hours before a careful 15-day drying process using patio shading and raised beds in the greenhouse.\u003c\/p\u003e\n\u003cp data-start=\"917\" data-end=\"1214\"\u003eRed Pacamara, a Pacas–Maragogype hybrid known for its large “elephant” bean size and vibrant cup profile, takes on a concentrated sweetness and clarity in peaberry form.
